With simple ingredients like yogurt, spices, and juicy chicken thighs, you can whip up this delicious dish in no time. Whether you’re short on time or want to add something special to your dinner table, this quick and easy tandoori chicken will be your go-to recipe!

Ingredients:

4 chicken thighs or drumsticks (with or without skin)

1/2 cup yogurt (plain, full-fat preferred)

2 tbsp lemon juice

1 tbsp ginger-garlic paste

1 tbsp tandoori masala powder

1 tsp red chili powder (adjust to taste)

1/2 tsp turmeric powder

1/2 tsp cumin powder

1/2 tsp coriander powder

1/4 tsp garam masala

Salt to taste

2 tbsp oil (for grilling)

Fresh cilantro for garnish (optional)

Instructions:

1. Prepare the Marinade: In a mixing bowl, combine yogurt, lemon juice, ginger-garlic paste, tandoori masala, chili powder, turmeric, cumin, coriander, garam masala, and salt. Mix well to create a smooth marinade.

2. Marinate the Chicken: Coat the chicken pieces with the marinade, ensuring they are fully covered. Let the chicken marinate for at least 30 minutes. For best results, marinate for 2-3 hours in the fridge, but if you’re in a hurry, 30 minutes will work fine!

3. Preheat and Grill: Preheat your grill or oven to 200°C (400°F). Brush the grill or baking tray with oil to prevent sticking. Place the chicken on the grill or baking tray and cook for 20-25 minutes, turning halfway through, until the chicken is charred on the outside and fully cooked on the inside.

4. Serve: Once the chicken is cooked, garnish with fresh cilantro and a squeeze of lemon juice. Serve with naan, rice, or a side salad for a complete meal.

Tips for Success:

If you have time, marinating the chicken overnight enhances the flavor.

To get that authentic smoky taste, you can broil the chicken for the last 2-3 minutes in the oven.

If you don’t have tandoori masala, substitute with a mix of paprika, cumin, and a pinch of cinnamon.
