Easy Jorda Recipe: A Traditional Bengali Sweet Rice Delight

1/4 cup raisins

1-2 drops of yellow or orange food coloring (optional)

Instructions

Step 1: Cook the Rice

In a large pot, bring water to a boil. Add the soaked rice and cook until it’s about 80% done. The grains should be tender but still hold their shape.

Drain the rice carefully and set it aside.

Step 2: Prepare the Jorda Base

In a separate large pan, heat the ghee over medium heat. Add the cardamom pods and cloves, stirring until they release their aroma.

Add the sugar and stir for 1-2 minutes. If you’re using food coloring, add it now for a vibrant color.

Step 3: Combine the Rice and Flavorings

Add the partially cooked rice to the pan, mixing gently to coat the rice with the sweet ghee mixture.

If using saffron, dissolve it in a little warm water and pour it over the rice. This will enhance both color and fragrance.

Step 4: Add the Nuts and Raisins

Stir in the mixed nuts and raisins. Continue to cook on low heat for 5-7 minutes, until the rice fully absorbs the sweetness and becomes soft and flavorful.

Step 5: Serve and Enjoy!

Remove from heat and let the Jorda cool slightly. Serve warm or at room temperature, garnished with extra nuts if desired.
