Ingredients:

Eggs – 4 (boiled and peeled)

Oil – 2 tbsp

Onion – 1 large (finely chopped)

Tomato – 1 large (finely chopped)

Ginger-garlic paste – 1 tsp

Green chilies – 2 (slit)

Turmeric powder – 1/2 tsp

Red chili powder – 1 tsp

Coriander powder – 1 tsp

Garam masala – 1/2 tsp

Cumin seeds – 1/2 tsp

Salt – to taste

Fresh coriander leaves – for garnish

 

Instructions:

Step 1: Boil and Prepare Eggs

1. Boil the eggs for 8-10 minutes until they are fully cooked. Let them cool, then peel and set aside.

2. Lightly score or make small cuts on each egg to help the curry sauce penetrate the eggs.

 

Step 2: Sauté Aromatics

1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.

2. Add chopped onions and sauté until golden brown. This will take about 5-7 minutes.

3. Add the ginger-garlic paste and green chilies, then cook until the raw aroma disappears.

 

Step 3: Add Spices and Tomatoes

1. Add turmeric, red chili powder, and coriander powder to the pan. Stir well and cook for another minute.

2. Add chopped tomatoes and cook until they become soft and oil starts to separate from the mixture.

 

Step 4: Simmer the Curry

1. Add about 1 cup of water to the pan and mix well. Bring it to a gentle simmer.

2. Add salt to taste and gently place the boiled eggs into the curry.

3. Sprinkle garam masala on top and let the curry simmer for 5-10 minutes until the flavors blend.

 

Step 5: Garnish and Serve

1. Turn off the heat and garnish with freshly chopped coriander leaves.

2. Serve the egg curry hot with steamed rice, roti, or any bread of your choice.
