Delicious Nihari is a traditional slow-cooked stew from the Indian subcontinent, famous for its rich flavors and tender meat. It’s a perfect dish for special occasions and is often enjoyed with naan or paratha. Here’s how to make this delectable dish at home!
Ingredients:
For the Marinade:
1 kg beef or goat meat, cut into pieces
1 cup yogurt
2 tablespoons ginger-garlic paste
2 teaspoons red chili powder
1 teaspoon turmeric powder
2 teaspoons garam masala
Salt to taste
Juice of 1 lemon
For Cooking:
4 tablespoons ghee or oil
2 large onions, finely sliced
4-5 green chilies, slit
1 tablespoon ginger, julienned
4-5 cups water
Fresh coriander leaves, for garnish
Lemon wedges, for serving
Instructions:
1. Marinate the Meat:
In a large bowl, combine the meat with yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, salt, and lemon juice.
Mix well and let it marinate for at least 2 hours, preferably overnight in the refrigerator for maximum flavor.
2. Prepare the Base:
In a heavy-bottomed pot or a pressure cooker, heat ghee or oil over medium heat.
Add the sliced onions and sauté until they turn golden brown.
3. Cook the Meat:
Add the marinated meat to the pot, stirring well to coat it with the onions and oil.
Cook on high heat for about 10 minutes, allowing the meat to sear and brown.
4. Add Water:
Add water to the pot (4-5 cups depending on your desired consistency) and bring it to a boil.
Reduce the heat to low, cover the pot, and let it simmer for 2-3 hours. If using a pressure cooker, cook for about 30-40 minutes after the first whistle.
5. Finish the Dish:
Once the meat is tender, check for seasoning and adjust salt and spices as needed.
Add the slit green chilies and ginger juliennes, cooking for another 10 minutes.
6. Serve:
Garnish with fresh coriander leaves and serve hot with naan, paratha, or rice.
Accompany with lemon wedges for an added tang.
